I bake when I’m worried.
Today my little sister left for a semester abroad in Ireland, and so I baked three batches of sugar cookies. I really really wanted to go to the airport with my parents but a three hour car ride and then another one back home just isn’t happening when you’re 37 weeks pregnant.
Yes I know, a little ridiculous. After all she’s supposedly an adult and can handle life on her own. However, mom and I are not sold. We’ll see how it goes.
Anyway I thought maybe you guys would like to test these super simple sugar cookies out for yourselves in case you have something you’re stressing over. Or you know, you just have a sugar tooth and can’t seem to quit it.
No these are not the kind of cookies you cut out and decorate and have all the fun with. But that’s only because we don’t want to do any work today. We just want to snack on some fluffy cookies that you probably already have all of the ingredients for!
I made one batch in mini muffin tins, mostly because they’re my dad’s favorite way to make a sugar cookie and he’ll be here any minute, but also because mini muffin shaped sugar cookies are kind of adorable. I’m obsessed with everything mini since I’ve been waiting for my mini to arrive any day now. My dad also prefers the cookies to be sprinkled with decorative sugar sprinkles when they come out of the oven but I didn’t have any and was just using what I already had at home for today.
The other two batches are exactly the same (just a normal sized sugar cookie) but I rolled one batch in regular granulated sugar to give it that crispiness that big chunks of sugar give to a cookie and the other batch I rolled in a bowl of granulated sugar AND brown sugar. (these are my favorite). Honestly when they came out I wished that I would have made them all that way.
So, here we go guys get ready for the easiest sugar cookies ever and possibly the softest!
